Oh-so-easy Mediterranean chicken


A Mediterranean-style diet is excellent for heart health and thankfully, it proves to also be delicious, which is always a bonus as far as I am concerned! This chicken recipe proves to be a winner with my young children and husband and takes less than 30 minutes to make.

Here are some instructions:

Chicken

Cut 2 or 3 chicken breasts into cubes approximately an inch thick. Put into a bowl and add lemon zest and some mixed Italian herbs. I then use some spray oil (I use Pura Coconut Blend spray) to coat a non-stick pan and fry the chicken pieces until they are cooked through but still tender.

Mast-o-Khiar

Grate some cucumber, then squeeze and remove the juice. Add 4 to 5 tablespoons of full-fat live Greek yogurt (Fage Total Greek Yogurt is good), a squeeze of fresh lemon juice and season with pepper and a little salt (I like to use the tiniest sprinkling of Cerebos Iodised salt).

Salad leaves

Toss some mixed salad leaves with dressing made up of 1 tablespoon of virgin olive oil, a squeeze of fresh lemon juice, a dash of cider vinegar and half a teaspoon of mustard.

Extras:

Chop up half a small bunch of flat leaf parsley

Toast some pitta bread
